Dijon Mustard Crusted Fish

I am having a serious moment with Dijon mustard. I've always loved it, but lately I feel like I could eat it with almost anything!! Anyway, with all of this heat we have been having, I have struggled a little bit with what to eat - whenever it is super hot, I'm never really in the mood to eat. Fish always seems to be a great option in the heat, so I experimented with dijon mustard and some bread crumbs and created this delicious meal worthy of a warm summer night!

Ingredients

4 Sole Fillets

1 Egg

2 cups bread crumbs

1/2 cup of Dijon mustard

A Splash of milk

Salt & Pepper

Dried Dill

Method

Preheat the oven to 400, and line a baking tray with parchment paper. You'll need two separate bowls, one for the bread crumbs and one for the dijon mixture.

Place the fish fillets on a towel to dry. Firstly, place the Dijon in one of the bowls, add the egg and splash of milk, salt and pepper, dried dill, and mix really well! To the other bowl, add the bread crumbs along with a crack of pepper and a pinch of salt.

Take one of the fish fillets, place it in the dijon mixture and coat it well. After that, place it in the bread crumb mixture and make sure both sides are amply coated. Place it on the baking tray and repeat for all of the fillets.

Bake the fillets for 8-10 minutes, until the fish is fully cooked! Enjoy it along side a simple green salad or some garden potatoes!
